Joe — Star Chef, Seattle Met's Next Hot Chef — was exec chef at Four Seasons, opened MKT, worked at Michelin-2 starred Cyrus, Exec Chef at Cave B, and spent years at The Herbfarm Restaurant.
Lieu — Eater Young Guns — worked Lark, Poppy, and Brimmer & Heeltap.
In 2019 we moved East, bought this farm, and started raising pasture-finished lambs the way we always wanted to cook them.
We sell whole and half lambs direct → and run hands-on harvest masterclasses each fall for chefs who want to see (and do) the whole process.
